A small house with one idea.

Thymelia buys two Greek harvests and brings them to the UK: raw thyme honey and the products of the hive from the Chania region of western Crete, and early-harvest extra virgin olive oil from the hill country above Kalamata. Whole harvests from one named grower, never pooled stock, with each batch’s laboratory certificate published in full. We have no shop yet, and we are not naming a date for one.

What we believe

Honey is one of the most adulterated foods in the world, and “raw” is its least policed word. Olive oil is the most checkable premium shelf in the aisle, and almost nobody checks it. The answer to both is paperwork rather than poetry: harvest dates, batch codes, coordinates, and test results in real units against the legal limits — HMF and diastase on one side of the house, free acidity, peroxide value and a phenolic figure on the other. What is in the jar, where it came from, and what the laboratory measured is the whole pitch.

Who is behind it

A small independent house. The guides on this site are written by the people who walk the groves and taste the harvests, and published under the house name rather than a personal one — held to the standard they set out: composition, origin and process, every figure traceable to a cited source. The house reads its own post: write to care@thymelia.com and a person who walks the groves answers.

Where things stand

Pre-launch, and we would rather show that than dress it up. The olive grove above Kalamata is contracted and its oil is certified organic; visits to the Chania apiaries are under way. Batch records and photography from the apiaries and the mill will appear here as they happen.
